Botaurus: the careful selection of local plants for an exceptional gin distilled under vacuum

Our new Avem creation, Botaurus, is a botanical gin made from several plants including parsley, nasturtium, and rose. To celebrate its release, we're taking a look back at the steps involved in making Botaurus.
A selection of local plants
Botaurus is made from distillates of local plants grown aquaponically by Les Nouvelles Fermes in Mérignac, north of Bordeaux. This new Gin Avem creation has allowed us to collaborate with new artisans and thus promote local expertise.
In addition, aquaponics cultivation has many benefits including water savings, higher yields and sustainable cultivation that minimizes waste and environmental impacts.
Once harvested, the plants were macerated to extract the beautiful local flavors. Maceration consists of immersing the botanicals in the neutral alcohol of the gin for a given period, which allows the aromas to diffuse and naturally infuse into the brandy.

An atypical vacuum distillation
As a reminder, distillation is a process of separating a mixture of liquid substances with different boiling points. It allows the components of a homogeneous mixture to be separated. In other words, distillation is the succession of evaporation and condensation.
