HISTORY

Designed in collaboration with Stéphane Allender, creator of the Tame Spirits Distillery, in Verdelais (33), this fourth opus naturally enriches the Avem Gins collection. It was developed using an ancestral method generally used for making Cognacs or Whisky: the art of blending.

This French gin is made from plants grown aquaponically in Gironde (Mérignac). Named in homage to the aquatic bird, Bittern, in Latin Botaurus, it uses the original Hippolais recipe to which are added distillates of nasturtium , parsley and rosebuds .

It is now available in a limited edition with 1116 numbered bottles.

DESIGN

We have harmoniously combined several eaux-de-vie to seek the perfect osmosis between them. The first is based on juniper berries, the second with our aromatics, and the third is created exclusively with grape varieties from the Bordeaux region (Merlot, Cabernet-Franc, Cabernet-Sauvignon, and Sémillon), which incorporates the distillates of our plants (parsley, rosebuds, and nasturtiums).


AROMATIC PROFILE

Gin Avem Botaurus is a "botanical" gin in which we find the fine notes of candied Hippolais lemons, but which is distinguished by its herbaceous and floral touches as well as a beautiful spicy length on the finish.

TASTING ADVICE

It's a subtle gin that works well served neat, over ice, or with an Indian tonic. It can also be garnished with dried rosebuds to enhance its rustic flavors, or fresh parsley leaves to evoke its roots.

COCKTAIL IDEA

Ingredients :

  • 1.5 cl of Supasawa (acid infusion) infused with basil (to prepare yourself)
  • 2 cl of Italicus liqueur
  • 4.5 cl of Gin Avem Botaurus
  • Fresh basil leaves

Instructions:

  1. Start by preparing the sour basil infusion by blending Supasawa with fresh basil leaves. Let it steep for 30 minutes or more for a richly flavored infusion.
  2. In a shaker filled with ice cubes, pour the acidic basil infusion, the Italicus liqueur and the Avem Botaurus Gin.
  3. Shake the shaker vigorously for a few moments to mix all the ingredients well and to chill the mixture.
  4. Strain the contents of the shaker into a chilled cocktail glass.
  5. For a finishing touch, you can garnish your cocktail with a fresh basil leaf or a lemon slice, depending on your preference.
