The Gin Avem Hippolais is a London Dry Gin characterized by fine notes of candied lemons, punctuated by subtle floral touches as well as a beautiful peppery length in mouth. It is a gourmet gin, also well served as a pure tasting at room temperature or with a tonic on crushed white grapes, recalling its wine origins.

This spirit was made in collaboration with Christophe Gauville, Master distiller of the Des Moisans distillery based in Sireuil, in the south of Cognac. We have produced our gin using an ancestral method generally used for making Cognacs or Whiskey: the art of blending.

We made 3 eaux-de-vie before seeking the perfect osmosis between them. A first made from juniper berries, a second with all our aromatic plants and our herbs, and a third created only with grape varieties from the Bordeaux region (merlot, cabernet franc, cabernet sauvignon and sémillon).

History

Sylvia owes its name to Sylvia atricapilla , the blackcap, a bird found in our Aquitaine landscapes. It feeds on many berries, especially elderberries. This spirit evokes a stroll in the heart of the Bordeaux region and the moments of sharing with family and friends that are associated with it. With its slightly golden color, this sweet and comforting gin liqueur recalls long evenings in sunny days.

Design

The result of a collaboration with the Des Moisans distillery, based in Sireuil, in the south of Cognac, Sylvia is based on blending, an ancestral manufacturing method commonly used in the production of Cognacs and Whiskies. This technique, widely used in the wine world, is part of the Maison Mounicq's DNA and consists of blending different eaux-de-vie to create a single exceptional spirit.

Made from the region's iconic grape varieties (Cabernet Franc, Cabernet Sauvignon, Merlot, and Sémillon), Sylvia was born from the encounter between Avem Hippolais London Dry Gin and an elderflower macerate. We then sought the perfect osmosis between the freshness of gin, the indulgence and sweetness of elderflower, all lightly sweetened to create a tantalizing, unique, and complex gin liqueur.

Aromatic Profile

A fragrant bouquet where the freshness of Hippolais blends with the sweetness of elderflower. The slightly bitter notes of juniper are counterbalanced by a gourmet and delicately sweet touch.

Frank and refreshing, the entry in the mouth immediately reveals a tension carried by citrus notes and a floral roundness.

Its texture is ample, slightly syrupy, which makes Sylvia particularly smooth and pleasant to taste.

Elderflower brings warm, slightly musky spring notes, while its wine origins give it structure and character.

Persistent, Sylvia leaves a fresh and delicious impression carried by its notes of white flower with slightly tangy aromas, not without reminding us of certain sweets from our childhood.

Tasting advice

Sylvia is best enjoyed chilled, in a frosted glass or over ice. Our gin liqueur also works well with tonic water. We recommend a tonic that's not too sweet and slightly bitter. You can add a few juniper berries to balance the roundness. For those with a sweet tooth, an elderflower-flavored tonic is just as enjoyable.

More unusual, our creation will be a perfect ally for your Spritzes. Its wine origins will pair perfectly with a sparkling wine such as a Crémant de Bordeaux to play the local card. (For example, the “B” from our friends at Château de Bonhoste will be your ideal ally for a refined and elegant spritz.)
