Collection N°1.03: 803 bottles, a new production, new barrels with the same grape varieties, the same Bordeaux châteaux, the same sought-after aromatic profile with the subtleties of the new selected barrels: Sémillon , Merlot and Sémillon Sec .
History
Whiskey ASSEMBLAGE is the fruit of the collaboration between Aymeric oenologist, father of French whiskies A. Roborel de Climens , and Cedrik founder of the Mounicq House specialized in the production of spirits made from grapes: the Nadé Vodka and the Gins Avem .
The two Bordeaux residents have combined their expertise to create a whisky imbued with their shared passion for the vine .
Aymeric has selected the best eaux-de-vie from the Hepp Artisan Distillery , then refined them in wine barrels from Bordeaux castles .
Cedrik , after having chosen three of them, was inspired, once again, by his winegrowing roots in order to marry them perfectly as one would blend a wine.
Aromatic profile
Despite its 50.2% alcohol content, this whisky is, paradoxically, very delicate and rounded, like the other creations of Maison Mounicq.
The 3 years of aging in French wood give ASSEMBLAGE aromas of flambéed bananas and ripe fruits in the middle of the mouth, to finish on delicate, persistent bitter citrus notes . On the nose, it reveals delicate aromas of candied fruit, vanilla and cocoa.
Refining in old Bordeaux wine barrels allows ASSEMBLAGE to reveal the subtle flavors of the different grape varieties:
THE Merlot , St Émillion, gives it notes of red berries, prunes, undergrowth and spices, while the Sémillon , Sauternes, gives it nuances of candied fruit, acacia flowers and honey. As for the Dry Sémillon , Graves, it brings freshness and light touches of bitterness.
Their union gives a pretty color and great complexity to the ASSEMBLAGE whisky.
