French whisky born in Bordeaux, Assemblage is the result of the collaboration between Aymeric Roborel de Climens and Maison Mounicq . This single malt was aged in three casks from great Bordeaux châteaux: Merlot from Château Guadet in Saint-Émilion, Sémillon from Château Doisy-Daëne in Sauternes, Sauvignon from Clos Floridène in Graves. The result: a limited edition of 808 bottles, an elegant and powerful whisky (50.2%). Our collection n°1 won the gold medal at Spiritives 2025.

History
ASSEMBLAGE whisky is the result of the collaboration between Aymeric, oenologist, father of French whiskies A. Roborel de Climens , Cedrik and Axel Nadé founders of Maison Mounicq specialized in the production of spirits made from grapes. The Bordeaux residents have combined their know-how to create a selection of whiskies imbued with their shared passion: the vine .
Aymeric selected the best eaux-de-vie from the Hepp Artisanal Distillery , then refined them in wine barrels from Bordeaux Châteaux .
The Nadé brothers, after having chosen three of them, were inspired, once again, by their winegrowing roots in order to marry them perfectly as one would blend a wine .
Design
Collection N°1.04 is 808 bottles, a new production, new barrels, new grape varieties, the same Bordeaux châteaux with the same aromatic profile. We have explored the subtleties of the new selected barrels to create an exceptional blend:
- of Merlot from Château Guadet , in Saint-Emilion (12 months)
- Sémillon from Château Doisy-Daëne , in Sauterne (18 months)
- Sauvignon from Clos Floridène , in Graves (16 months)
Aromatic Profile
Despite its 50.2% alcohol content, this whisky is, paradoxically, very delicate and rounded, like the other creations of Maison Mounicq.
The three years of aging in French oak give ASSEMBLAGE aromas of flambéed bananas and ripe fruit on the mid-palate, finishing with delicate, persistent bitter citrus notes . On the nose, it reveals delicate aromas of candied fruit, vanilla, and cocoa.
Refining in old Bordeaux wine barrels allows ASSEMBLAGE to reveal the subtle flavors of the different grape varieties:
Merlot , St Émillion gives it notes of red berries, prunes, undergrowth and spices, while Sémillon , Sauternes, gives it nuances of candied fruits, acacia flowers and honey. As for Sauvignon , Graves, it brings freshness and light touches of bitterness.
Their union produces a pretty dress and great complexity.
Tasting advice
Enjoy it neat to fully appreciate its aromas. You can also add a few drops of pure water to soften and further open up its flavors. For a gourmet pairing, enjoy it with a square of dark chocolate.
Cocktail idea
Old fashioned
- 5cl of blended whiskey - Collection n°1
- a dash of cane sugar syrup
- 2 to 3 dashes of Angostura bitters
Preparation: Pour the ingredients directly into an Old Fashioned glass with clear ice. Stir gently and squeeze the orange zest over the glass, then drop it in.
