“Blending eaux-de-vie, blending know-how, blending passion”
A French whisky born from the meeting with specialist Aymeric , oenologist Roborel de Climens. This blended whisky combines two casks: an Alsatian whisky aged for 20 months in Chenin casks and a Charente whisky aged in Cognac casks. History
ASSEMBLAGE whisky is the result of the collaboration between Aymeric, oenologist, father of the French whiskies A. Roborel de Climens, Cedrik and Axel Nadé founders of Maison Mounicq specializing in the production of spirits made from grapes. The Bordeaux residents have combined their expertise to create a selection of whiskies imbued with their shared passion: the vine .
Design
For this new edition, the two brothers, inspired by their winemaking roots, selected a barrel of Alsatian whisky aged for 20 months by Aymeric in a former Domaine Belargus barrel that had previously contained Chenin. They then paired it with a Charente whisky barrel with exotic and fruity notes.
The assembled barrels:
Alsatian Whiskey
- Barley: French / Malted by Soufflet / Brewed by Meteor
- Distillation: Double on Carl stills / Hepp Distillery / France / 2021
- Aging: New Barrel / French Oak / Limousin
- Maturation: 20 months / Ex-Chenin barrel from Domaine Belargus / Anjou
Charentais Whisky
- Barley: French
- Distillation: Double on Charentais stills / France
- Aging: New barrel / French oak / Limousin Refining: Ex-Cognac barrel
Slow reduction with pure water / Non-chill filtered / Bottled: 2024
Aromatic Profile
This whisky reveals an expressive and generous first nose with aromas of exotic fruits promising a balance between indulgence and power.
When tasted, the maturation in old Chenin barrels releases flavors of white fruits and white flowers, balanced in the finish by a slight bitterness with notes of roasted nuts.
Tasting advice
The 2024 Hors-Série Whisky can be enjoyed slightly chilled to reveal its powerful aromas. Its fruity, roasted notes will pair perfectly with your festive meals, such as mature hams and hard cheeses.
