“Blending eaux-de-vie, blending know-how, blending passion”

This peaty whisky is the result of a new collaboration between Aymeric Roborel de Climens and Maison Mounicq , creators of French grape-based spirits. Together, they have created this original blended whisky, rooted in their shared passion: vines.

For this edition, two Alsatian whiskies were blended: A 40 ppm peated whisky, aged in Bourbon barrels & a whisky matured for 42 months in Merlot barrels from Clos Manou

This French whisky offers a vanilla nose, followed by woody, smoky, and slightly vinous notes. On the palate, the fruity roundness gives way to a long, toasty finish. Enjoy neat, at room temperature. It pairs perfectly with charcuterie, cheese, chocolate desserts, or foie gras.

History

ASSEMBLAGE whisky is the result of the collaboration between Aymeric, oenologist, father of French whiskies A. Roborel de Climens , Cedrik and Axel Nadé founders of Maison Mounicq specialized in the production of spirits made from grapes. The Bordeaux residents have combined their know-how to create a selection of whiskies imbued with their shared passion: the vine .

Design

For this edition, the two brothers, inspired by their winemaking roots, selected and then blended two barrels of Alsatian whiskies. A whiskey matured in a former Merlot barrel from Clos Manou and a peated whiskey at 40 ppm.
This new alliance gives birth to Whisky ASSEMBLAGE Collection n°4.

Aging: Red barrel / Ex-Bourbon

Alsatian Merlot Whisky:
Barley: French / Alsatian Pilsen / Malted by Soufflet / Brewed by Météor
Distillation: Double on Carl stills / Hepp Distillery / France / 2017
Aging: New barrel / French oak / Limousin / 36 months
Refining: Ex-Merlot / Clos Manou / Médoc / 42 months

Bottling: Slow reduction with pure water / Non-chill filtered

Aromatic Profile

On the nose, Whisky Collection No. 4 reveals a vanilla roundness, followed by woody and smoky notes, creating a perfect balance between indulgence and peat. On the palate, the tasting unfolds in two distinct phases. First, a generous sweetness manifests itself with gourmet and candied notes, the result of 42 months of maturation in Médoc barrels. Then, toasted and lightly smoky flavors bring a harmonious intensity. The finish is long, marked by vinous and toasted touches, offering a tasting that is both complex and indulgent.

Tasting advice

Enjoy neat, at room temperature, to fully appreciate its aromas. You can also add a few drops of pure water to soften and further open up its flavors.

As an aperitif, Whisky Collection No. 4 pairs perfectly with charcuterie. For the end of a meal, pair it with cheese and figs. If you prefer something sweet, a chocolate dessert will balance the whisky's peaty side, provided it isn't too bitter. Finally, for a more original twist, its powerful yet measured peat pairs perfectly with foie gras.
